BACKGROUND
The Hemlocks is a long standing establishment built along State Route 2 during the 1950’s. Originally, a filling station, motel and cafe, The Hemlocks grew into a full service restaurant whose reputation for great food endeared locals and drew visitors from far and wide. Over the years – through several owners – the RV Park was added. In 2013, Tammy and Will Hedrick purchased The Hemlocks and with great joy have been working to revive the rustic atmosphere of the much loved Hemlocks. In 2020 The Hemlocks was purchased by restauranteur and businessman Johnney Walker upgrading the Resort even further by adding a more rustic lodging and a New Texas style BBQ, Steakhouse call Old West Texas, a new outdoor seating pavilion and venue for local and national talent for great music and TEXAS BBQ !

Our 2022 BBQ season is opening ! Ww will be open May 26 Memorial weekend , we will be open Thursday thru Sunday from 11am until 7pm or until were sold out for the day.

OUR OPERATION
At a typical West Texas pit-style barbecue restaurant, customers take a cafeteria-style tray and are served by a butcher who carves the meat by weight. Barbecue meats are commonly sold by the pound. Next, side dishes and desserts including slices of white bread, crinkle-cut dill pickle chips, sliced onion, jalapeño, and corn bread are picked up along the line. This style of barbecue emphasizes the meat, so if sauce is available, it is usually considered a side to dip into on sauces is due to the fact that noon meat markets were once dominated by upper-class purchasers who could choose from the highest-quality cuts of meat and had little interest in sauces.
